What’s for lunch?

On my rest days (from strength training), I have way less carbs but lots of protein and good fats. Here’s a sample meal from today. I put salsa on EVERYTHING instead of having to use dressings, cheese, creamy things… salsa!!!

1 roma tomato
red pepper diced
1/2 cucumber
1/2 string cheese stick diced
1 tbsp almond slices
balsamic vinegar
1 tbsp yogurt dressing

It works for us. Just wanted to share what we are doing, but it doesn’t mean you need to do it. This is the first time in my life that I have lost weight like this!

I am in learning mode, meaning I love learning from y’all and researching anything nutrition. Thank you for your comments and encouragement! Together we are all going to accomplish much in these next 8 weeks.
